Join us in congratulating Jess Nieder on being named a 2016 National Outstanding Young Farmer!

“The big news is that this past weekend we won the title 2016 National Outstanding Young Farmer. This is awarded to four farmers between the ages of 18 and 40 each year, with a candidate pool from across the country. I fell very honored of course, and I was also very shocked! The other candidates were from BIG farms. One farmed close to 6,000 acres of grain, another had a 350 head herd of dairy cows, another did 200 acres of vegetables. At 19 total acres, and 9 acres in vegetables, I was the farmer of the smallest farm they have ever selected. In 60 years with 240 winners, they had not typically selected organic farmers (only one before this year), women (only five ever), or especially single women (I was the first one of those anomalies). I do not believe that is because the organization (Outstanding Farmers of America) is backwards, but because agriculture is an industry that could use a few “accidents” happening to the glass ceilings. Here’s to happy accidents!”

Just as the weather starts to feel more wintery, things are starting to heat up at the Denville Farmers’ Market. The Denville Farmers’ Winter Market is open every other Sunday 10 am to 1 pm, with January 10 as the next market in the Bloomfield Ave. parking lot.

This season, DFM will have the most winter market vendors offering products ranging from produce, soups, cheeses, juices, desserts and more. On the lineup for DFM Winter Market are mainstays from the regular season, including: Spoon Me Soups, Sweet-Niche Bakery, Chickadee Creek Farms, Gooserock Farms, Bobolink Dairy and Bakehouse, Mo Green Juice, Happy Harvest Hydroponics, Nutty Novelties, Picklelicious, Silver Birch Kitchens, Fontanarosa, Mini Mac Farm and Stefan’s.

To round out the Winter Market, there are several new vendors. Stonud is bringing warm and freshly made donuts to the winter market. The latest addition to the market is DiningWild, a foraged food provisioning company whose focus is on sustainably harvested wild foods, including herbs, greens, mushrooms, roots, nuts and berries.

Chickadee Creek Farm will be selling various greens and storage crops based on availability, such as carrots, Watermelon Radishes and turnips. Chickadee Creek Farm is unique because they’re one of the only farms in New Jersey that can grow and harvest in the winter. Customers can also buy and hand-roll their own oats at Chickadee Creek Farm’s booth. According to Farmer Jess Niederer, the hand-rolling process allows oats to release oils at the germ layer. Unlike a commercial product that may lose the healthy oils when heated for shelf stabilization, healthy oils can be enjoyed in the freshly rolled oats.

“It is fantastic to support the ever green growing local food market, where knowledgeable customers are driving the need for the market to become better and bigger. Vendors are being creative to meet the local food demand. Chickadee Creek Farm is installing high tunnels to be able to grow greens in hardiness zone 7 all winter,” says Denville Farmers’ Market Manager, Liisi Lascarro.

Denville’s own, Happy Harvest Hydroponics, is able to grow their lettuce and herbs all year long. H3 describes their process of hydroponically grown produce as space effective, soil-less, growing environment, which allows them to offer their selection even in the middle of winter. “We offer farm to table produce—roots and everything,” says co-founder of Happy Harvest Hydroponics Cris Tuhy. New for Happy Harvest, customers can order their selections online Monday-Friday and then pick up at the market.

At DFM, many customers enjoy tasting treats for breakfast and lunch in between shopping. With that in mind, Sweet-Niche Bakery will be making hot and fresh Belgian Waffles on-site for $7. To make things even sweeter, customers can choose from four different toppings: Nutella, Bananas Foster, apples and cinnamon and a cinnamon roll glaze. Sweet-Niche will also be selling many of their popular desserts, such as their Classic Crumb Cake, Pignoli Cannoli and cheesecake.

Fontanarosa will be featuring their selection of homemade ravioli and pasta. Alongside of Fontanarosa’s tent will be new concept and new vendor to the winter market, Stonud’s. Developed by the culinary creatives at Fontanarosa, Stonud’s hot donuts will be “flipping” and fresh onsite. Choose between six flavors: Salted Caramel, Apple Cider, Tiramisu, Chocolate with Peanut Butter Glaze, Maple Glazed Bacon and Hot Chocolate. These sweet treats will run you $1.00 for Apple Cider donuts and $1.25 for the other flavors.

Look for other vendors who are keeping things going this winter. Silver Birch Kitchens will be dishing out their culinary creations. SpoonMe Soups will have several soups available. Gooserock Farms will feature their honey and other products. Mo Green Juice will be selling their selection of juices. Some of these juices have 4-5 servings of veggies in each bottle. Nutty Novelties will have their gourmet nut butters onhand. Bobolink will be selling their cheeses from Grass-Fed Raw Cow’s milk and breads. Denville Farmers’ Market stalwart, Picklelicious, will have their popular pickles and relishes as well.

Union Hill Farms is a Cornerstone in the Community

When Denville Farmers’ Market manager, Liisi Lascarro, set out to organize the Market, she did so with Union Hill Farms as an inspiration. Our town is fortunate enough to have farms as a resource, we should take advantage of that, she thought.

Founded in 1986 by Jeff O’Hara, Union Hill Farms is one of our town’s local farms and one of the original DFM vendors.

O’Hara says that farming is in his blood. His grandfather and uncle were farmers. Many years ago, his grandfather’s farm boasted an impressive 140 acres and transported crops to sell in a horse-drawn carriage. That farm has since become houses in Denville, but O’Hara, who began Union Hill Farms shortly after college, has much to show for his hard work.

Today, he and his family, along with five employees operate their farm, just off of Rt. 10, the area otherwise known as Union Hill. O’Hara says their main crop is sweet corn, which is usually ready at the Denville Farmers’ Market in mid-July—just a few weeks from now. Union Hill Farms is known to have a truckload of their corn to sell at the Denville Farmers’ Market. The farm has about 18 acres of corn, in addition to other crops such as cucumbers and squash. He’s still planting now and will continue to plant until middle of August. Fall crops include cauliflower, broccoli, radishes, cilantro, among other items. The farm also grows and sells in-season items such as fresh flowers, tomatoes, apples, potatoes and other produce available at their booth at DFM.

Because Union Hill Farms is a staple in the Denville community, O’Hara realizes the importance of being a part of DFM. “We farm right here in Denville, so I know I have to be there.” O’hara says. “The Denville Farmers’ Market is so diverse, not only in farms, but also specialty vendors. There’s such a camaraderie with other vendors, too.”

Right now, Union Hill Farms has a new planting of raspberries that are kicking in, so be on the lookout for some ripe raspberries at the market this weekend, as well as the first field tomatoes from south Jersey.

Fontanarosa’s Homemade Ravioli is a Denville Farmers’ Market Staple

When it comes to ravioli, Anthony Fontanarosa knows a thing or two about those pasta pillows filled with decadent cheeses and other delicious fillings. In fact, Fontanarosa has been cranking out hundreds of ravioli a day since the early 90s.

At the small pasta manufacturing facility and deli/specialty grocery store in Totowa, Fontanarosa gave me a behind the scenes tour and a closer look at what makes him so well known for his ravioli and pasta.

The Denville resident and his sister, Luciana, took over the family business in 1989. With a lot of hard work and creativity, Fontanarosa found his niche and has evolved his business around it. He’s gone from hand-making ravioli with a manual machine to making upwards to 4,000 ravioli a week with a powerful La Monferrina P2 Pasta Machine.

Fontanarosa’s started out as a butcher and sandwich shop and also did some catering. Today, Fontanarosa says the bulk of the business is farmers’ markets and supplying to restaurants. Because Fontanarosa’s is a small company, it allows for flexibility to cater to other small business who might require special orders.

“You want 5 lbs of pasta, I can make 5 lbs. You want black pasta, I’ll make it. The big companies can’t really do that.” Fontanarosa says.

On the day we visited, he showed us two outgoing orders for area restaurants linguine with a hint of lemon and a special order of black pasta. One of the most unique special orders was a ravioli with black garlic and fennel.

Fontanarosa’s supplies pasta to 27 restaurants, including New Jersey favorites such as Luciano’s in Red Bank, Old Man Rafferty’s in New Brunswick, E&V in Patterson, Fresco and Agarre in Montclair and Two A’s in Hoboken.

Today, the company has five full time employees and two on the field who help out in the farmers’ markets. Fontanarosa currently has a presence at four area farmers’ markets. In addition to Denville, Fontanarosa’s can be found at Ringwood, Long Valley and Ramsey.

“At one time, we were up to 20 markets,” Fontanarosa says. His pasta and other delicious food have been featured at farmers’ markets such as Ramapo to East Brunswick.

Because Denville is his backyard, Fontanarosa has been a staple at Denville Farmers’ Market since day one. And if you were to ask any of the other vendors, Fontanarosa’s easy-going personality and graciousness has earned him the unofficial title as the market “assistant manager.” When he’s not greeting market visitors on Sundays, Fontanarosa can usually be found making fresh mozzarella on site. And because Fontanarosa’s is a family operation, his daughter often helps to sell the ravioli and pasta at the Denville Farmers’ Market.

Fontanarosa developed all 72 ravioli flavors; most are a huge hit, and some, not so much. Playing up his culinary creativity and combining accessibility to fresh ingredients offered at farmers’ markets such as ours, Fontanarosa is able to develop unique flavors. This week, he created a goat cheese and beet ravioli with beets he got from fellow Denville Farmers’ Market vendor, Chickadee Creek Farms. Pictures and words can’t describe the naturally vibrant hue and luscious taste of this original Fontanarosa ravioli creation.

Fontanarosa’s certainly lives up to its name as the best kept secret in Totowa; but more appropriately, he should be known as Denville’s own Ravioli Guru.

Featured Vendor: Pickle Licious

On any given Sunday at the Denville Farmers’ Market you can probably spot a kid or two noshing on a Pickle-on-a-Stick. In the back corner of the market, Pickle Licious sets up their tasting bar and pickled goodies across a few tables and among a few barrels.

Run by Robin Samra, her daughters, Alex and Taylor and husband Ray Calvo, Pickle Licious is a mainstay at area farmers’ markets, including the Denville Farmers’ Market. Robin’s passion for pickles is anchored at her retail location at 384 Cedar Lane in Teaneck, which boasts the old school Lower East side vibe, featuring free samples all the time.

Like its retail location and farmers’ market booths, Pickle Licious attracts a loyal following at the Denville Farmers’ Market. Even before the market officially opens on Sunday mornings, the line for pickle lovers begins early. Whether its for pickles, olives or another Pickle Licious item, the crowds keep this farmers’ market favorite busy all day.

Pickle Licious’ specialty is its namesake: pickles. You can buy pickles by the gallon, quart, pint, or pickle-on-a-stick. And in the name sustainability and Denville Farmers’ Market’s ongoing campaign, Reuse, Recycle, ReMarket, you can bring containers to be filled at Pickle Licious. Beyond pickles, the Pickle Licious flavor expands onto their famous olives, olive paste, homemade tapenades, stuffed grape leaves, and marinated artichokes.

Featured Vendor: Sweet-Niche Bakery

In the center of Downtown Denville, the sign on the door at 32 Broadway is subtle and sweet. It conveys a bold statement on the exterior, and leads to a delicious gateway to baked treats on the second floor. Upon entering the door heading to Sweet-Niche Bake Shop, impeccably-baked masterpieces could be smelled on the way up the hot pink staircase.

Owned by Lisa E. Rossetto, Sweet-Niche Bake Shop is tucked in the back corner of the second floor above Sweet Expressions. Rossetto’s shop doubles as a bakery and storefront that churns out baked items from scratch from recipes developed by Rossetto herself.

To understand and truly appreciate the essence of Sweet-Niche Bake Shop, you have to get to know the baker first. Her story is one that harnessed her passion and penchant for baking, and ultimately, fueled by love and friendship. Rossetto says she developed a love of baking from her grandmother and mother. Her friends who love her baked treats urged her to open her own bakery. However, it was Rossetto’s friend, Isy’s love for her biscotti that made a profound impact. When Isy fell ill, one of the only things she could stomach was Rossetto’s biscotti. Following her heart, after many years in the corporate world, Rossetto took the leap and opened Sweet-Niche Bakery. As Rossetto’s business began to flourish, her friend succumbed to her illness, further solidifying how life is filled with bittersweet moments and milestones.

Rossetto still makes Isy’s favorite biscotti, which are officially called O.M.G. Biscotti and are made with apricot, white chocolate and almond.

With a pastel pink fridge, cotton-candy colored walls and a covet-worthy hot pink Kitchen Aid mixer, Sweet-Niche Bakery is a girls’ dream come true. Rossetto embraces Sweet-Niche Bakery’s boutique bakery niche and proudly confirmed that all of her baked goods are carefully crafted in small batches.

Sweet-Niche Bakery is one of the original vendors at the Denville Farmers’ Market. “This will be my sixth year. I’ve never missed one; Sweet-Niche has been there for every single one!” Rossetto says.

“We’re set up two hours before the market starts and we have customers before it opens. It’s a cult-like following!” says bakery employee and Rossetto’s right-hand woman, Deb.

Sweet-Niche has a defined following, and that includes the canine variety. Sweet-Niche’s unofficial mascots are two beautiful white dogs named Loki and Tyra Banks who drag their owners to Sweet-Niche’s booth, specifically for the poundcake.

Local Denville Market Visitors aren’t the only ones who crave Sweet-Niche Bakery treats. “The thing about the crumb cake: I ship them all over the United States. I ship it to California because they can’t get crumb cake there. People hear about them from their friends here and request it. I also ship to South Carolina and Georgia, too!” The 11-lb. crumb cake “brick” is no joke and has some serious crumbs.

Rossetto set up shop on Broadway in Denville three years ago and attributes the trajectory of her business to her presence at the Farmers’ Market “I’m hoping one day to have a first floor storefront,” Rossetto confided.
